Ingredients for Sauce

½ cup fresh orange juice
1 tablespoon orange zest
1/3 cup low-sodium chicken broth
2 tablespoons soy sauce
2 tablespoon honey
2 tablespoons rice wine vinegar
2 tablespoons corn starch
1 tablespoon hot sauce or Sriracha

Ingredients for Shrimp

1 lb shrimp, peeled and deveined
Salt to taste
Cracked black pepper
1 teaspoon sesame oil
¾ cup chopped bell peppers
2-3 cloves garlic, minced
2 tablespoons fresh ginger, peeled and grated
2-3 tablespoons chopped scallions
Chopped cilantro for garnish

Directions

Mix all the ingredients for making the sauce. Whisk well and keep aside.

Pat dry peeled and deveined shrimp, season with salt, black pepper, and sesame oil. Heat a skillet, and add sesame oil to it. Allow the oil to become smoking hot, and then add the shrimp in a single layer. Cook for a minute, flip and cook for an additional minute on the other side. Transfer cooked shrimp to a plate.

In the same skillet, add chopped bell peppers and allow them to cook for a minute or two without stirring. Next, add in the fresh ginger and garlic. Sauté them with the peppers, and allow the veggies to cook lightly for about 4-5 minutes. You can also other veggies of your choice at this time. Snap peas, shitake mushrooms, broccoli florets, peas, etc. work well for this recipe.

Whisk the orange sauce, and add it to the side of the skillet, stirring continuously so it doesn’t stick to the bottom. Allow the sauce to come to a boil, and allow it to simmer for a minute or two.

Add the cooked shrimp to the pan, mix well with the veggies and the sauce and allow it to warm through for about 30 seconds. Don’t cook the shrimp at this stage, since they’re already cooked.
Garnish with chopped scallions and cilantro. You can also add some toasted sesame seeds for a nice crunch.

Serve this delicious Asian-style shrimp with steamed rice.

While scratch-made food tastes great, a bag of ready-to-use frozen shrimp works just as well for this recipe. You can also use frozen shrimp to whip up other flavorful recipes that you'll love.
