Ingredients
1 cup all-purpose flour
Salt to taste
Cracked black pepper
2 eggs beaten
2 cups Panko bread crumbs
2 tablespoons Cajun or Creole seasoning
12 ounces shrimp, peeled and deveined
Oil for frying
Salt to taste
Cracked black pepper
2 eggs beaten
2 cups Panko bread crumbs
2 tablespoons Cajun or Creole seasoning
12 ounces shrimp, peeled and deveined
Oil for frying
Directions
- The first step is to prepare the coating for the popcorn shrimp. Take three separate bowls, and in the first one add the flour, mixed with salt and pepper. In the second bowl, add the eggs and whisk them thoroughly. In the third bowl, add the Panko crumbs with the Cajun seasoning, and mix well.
- Begin coating the shrimps, 4-5 at a time. First, coat them with the flour, shaking off any excess. Dip them in the beaten egg, and coat with the Panko crumbs. Ensure the breading coats the shrimp really well by pressing it well.
- Repeat for this process of breading for all the shrimps.
- Preheat oil in a frying pan until it’s hot. Drop-in some breading and check if it’s sizzling in the oil – this implies the oil is hot enough for the breaded shrimps to fry perfectly.
- Add the shrimps to the hot oil, 4-5 at a time. Cook on the first side 2 minutes then turn, flip and cook for 1 to 2 minutes more until golden brown. Place the fried shrimps on a paper towel to drain off excess oil.
- Serve hot with your choice of dipping sauce and lemon wedges.
Helpful Tips
- Use small shrimps for great flavor. Small size shrimps cook fast and retain their delicate crunchy texture when fried.
- Ensure the oil is sufficiently hot before you fry the shrimps, or else you may end up ruining the texture of the shrimps.
- If you’re using frozen shrimps, you must thaw them well before making this recipe.
